The article grounds the necessity of research of the information security within the framework of general economic security of fruit and vegetable processing enterprises. The priority of tasks of information protection is defined within the process of forming of control system by an enterprise. The retrospective and modern state of the problem of forming of effective management information security is analysed. It is found out that the principal reasons of low level of information security of enterprises of fruit and vegetable processing industry are rooted in the post-privatisation stage of their functioning. The terms of providing of economic and informative security of modern enterprise which became the basis for formation of mathematical model of dependence of profitability of enterprises on the factors of informative protection of an enterprise are analysed. The set dependence comes forward as the basis for substantiation of guidelines for the increase of information security of domestic enterprises. The conducted researches make is possible to develop detailed teoretical and methodological, methodical and practical provisions in relation to the management of information security of the enterprises of fruit and vegetable processing industry.
